Nutritional Value of Seaweed - Good for Both You and the Earth

Reducing Salt Intake
Seaweed is full of minerals, and is particularly noteworthy for having a high amount of potassium. Potassium is known for helping to excrete and limit the effects of sodium. Potassium also has the benefit of providing a salty taste without including sodium. Thanks to this, seaweed can help limit your sodium intake. Salt is made of sodium and chloride, with the sodium being the part we worry about for our health. The potassium in seaweed can help you reduce the amount of that pesky sodium you might be struggling with!
Amino Acids and Dietary Fiber
Another unique nutritional value of seaweed is its high amino acid score and high percentage of dietary fiber. It might surprise you to know that seaweed has an amino acid score (protein value) much higher than other land grown crops. For example, white rice has an amino acid score of 65 and barley is 36, while seaweed is 91. Seaweed’s amino acid score is 2 to 3 times higher than many other foods.
Many of us want to increase our dietary fiber intake, and seaweed is helpful for that too. Based on its dry weight, kelp seaweed has 27.1% dietary fiber and wakame seaweed has 32.7% dietary fiber. Like with seaweed’s amino acid score, the percentage of dietary fiber in seaweed is also higher than many other foods.
Omega-3 Fatty Acids and Carotenoids
Seaweed is also noteworthy for containing many omega-3 fatty acids (such as eicosapentaenoic acid “EPA”) as well as carotenoids. Seaweed contains up to 10 times more carotenoids than many popular vegetables. For example, the amount of carotenoids in a carrot is 300 μg/g DW (dry weight) and a tomato is 900 μg/g DW. Meanwhile, the carotenoid count in akamoku seaweed is 4,500 μg/g DW, and wakame seaweed is 2,300 μg/g DW.
Benefits of Fucoxanthin, the Seaweed Carotenoid
Not only does seaweed contain a higher amount of carotenoids than other vegetables, it contains the marine carotenoid fucoxanthin. Fucoxanthin has been shown to have some amazing effects such as inhibiting the growth of cancer cells , inducing apoptosis , contributing to anti-inflammation , having an antioxidant effect , as well as helping with obesity  and diabetes . Fucoxanthin has amazing effects but cannot be chemically synthesized, so getting fucoxanthin is one of the great benefits you get by eating seaweed.
